Kids R Us

I think all mothers agree that kids are the happiest rolling around in dirt. Well, some kids anyway. My kids and their friends are, certainly.

I have seven children yesterday. Yesterday was sand pile day. One child sneaked in some water, and they were happily building castles. Another child found a water gun, and off they went making tracks in my kitchen filling and refilling their one and only water gun.

They were partially wet and covered with sand after an hour. I decided to let them have water hose too. Actually, that's after 1 hour of whining. They were gleeful and hopping about playing with very wet sand and plenty of water. I have sands all over my house. Even in my oven.

How the sand got into my oven, I will never know. After 4 hours in the muddy sand, rolling and playing, they were done. Their two friends went home, dirty and sandy-wet, but very happy. Unfortunately, I didn't get a chance to take a picture.

Today is another playdate, and it's lego day. All seven children are now in various stage of building one thing or the other in my living room. Everyone's happy. Mostly me. No sand to sweep and vacuum today.

Recipe Rally: Pasta

Summer is here, and I bet mommies get even less time to prepare dinner with all summer activity. I have learned to rely on pasta for those must-have-dinner-now moments when kids are starving.

I saw this recipe on Everyday Food program on PBS and it's great. Fancy enough for the good dinner plates, but won't cost you any time at all. This is great served with any recipe from our desserts and/or appetizer themes a few weeks ago.

Spaghetti Carbonara
Serves 4 Prep time: 30 minutes Total time: 30 minutes

A carbonara sauce is typically made with bacon, eggs, and cheese. We've added a little half-and-half for a silky texture.

Set a large pot of water to boil (for pasta). In a large skillet, cook bacon over medium heat, stirring occasionally, until crisp, 8 to 12 minutes; transfer to a paper-towel-lined plate.

Salt boiling water generously; add pasta and cook until al dente, according to package instructions.

Meanwhile, in a large bowl, whisk together eggs, Parmesan, and half-and-half. Set aside.

Drain pasta, leaving some water clinging to it. Working quickly, add hot pasta to egg mixture. Add bacon; season with salt and pepper, and toss all to combine (heat from pasta will cook eggs). Serve immediately, sprinkled with additional Parmesan cheese.
